Fluffy Millet

Last week I came across the Creamy Quinoa with Kale recipe from Hungry Hungry Hippie and wanted  to give it a try. Since I rarely ever have quinoa at my house I decided to substitutie it with millet and go from there. So it's still nutritious, proteinlicous, and creamy! Alright so millet doesn't have as much lysine as quinoa but it's still one of those non-meat meals that is still high in protein. What more can a girl ask for? Oh and there is a bit of kale hidden in there :P
Fluffy Millet with Kale

Ingredients (about 5 servings)
  • 1.5 cups of millet
  • 3 cups of water
  • 1 cup of chickpeas
  • 4 egg whites
  • 30g of cheese (I used plain old cheddar)
  • EVOO (extra virgin olive oil)
  • Kale, as much as you want!
Directions
  • Cook the millet (takes about 30 minutes or less if soaked prior)
  • Cut up kale into small pieces and blanch it he 
  • Blend chickpeas with some water and EVOO to make it hummus like (or use pre-made hummus)
  • Add the hummus and kale to the millet
  • Blend in cheese and egg whites to the millet while it's still warm
  • Adjust for salt and pepper
When I was first making this dish, I was like what is this? However, after adding in the egg whites everything just really comes together. The dish is OK for leftovers but you get water coming out of it. 

Speaking of food, I found this cool picture online. Got to love package advertisements nowadays. I remember eating those Silhouette yogurts that are low fat, zero sugar, and magically 40 calories. They also came in desert flavours like key lime pie and lemon meringue. I can't believe I used to think they were healthy at some point in my life...
I absolutely love number 5! I think that it's the case with a lot of products nowadays especially cereal. You look at the nutritional info of some Kellogs shit or Wondercrap bread and the nutritional profile looks amazing. Then you look at the ingredients and wonder why you're not just taking vitamin and mineral supplements while living off of sugar..

What are some deceptive Food Marketing statements that you've come across? Were you ever fooled by them?

    1. I won't lie but I drink diet coke about once a month :( It takes a while to break the habit. I'd suggest trying kombucha... it has that fizzy pop taste but is basically fermented tea.

  2. This looks so good, but unfortunately I don't think 2 of my 3 kids would eat it, they are such a downer sometimes :) But I did get a loaf of spinach, sundried tomato bread from Great Harvest the other day and they liked that, so maybe there's hope!

    1. Oh kids lol! I think my grandma was uber lucky that I ate a lot of vegetables as a kid (wasn't the case with meat though). Try sneaking spinach in their fruit smoothies ;) Also, I saw this Vitamix demonstration and they made ice cream with broccoli in it! Crazy!

  3. Isn't it funny/terrible about those marketing phrases!?!

    I have millet in my pantry that I bought a LONG time ago for a recipe, and have never used it again. I wonder if it's still good, or if it would be stale or something?

    1. To be frank millet is one of those grains that just doesn't keep well. It has something to do with the fat content but it does go rancid :( I would say not to use it because each time I use old millet it's kind of bitter.

      Yeah... those marketing phrases are horrible!

  4. Sounds like an interesting recipe. I love most grains. I will have to try millet! I have to laugh when I see "low-fat" and "good source of vitamins" plastered on candy packages now a days. For real!?!

    1. You have to try millet- it's amazing. Ok I'm biased I grew up eating that stuff.

      On candy? Wow! I see it on cereal boxes which technically is candy... I love how those jelly candies say they're made out of fruit and fruit juice is one of the last ingredients on the list, way way way after sugar! That's my fear of going into food science that I would be working for cruel companies who do this kind of bs. :S

    1. Yay :) Millet is delicious but my grandparents only know how to cook it plain. Kind of boring... This is definitely a way to spice it up :D
