Jicama- the easiest root vegetable to prepare

This winter while in Cancun, Mexico I came across a tasty root vegetable- Jicama. It takes kind of like an Asian pear except less sweet. If you've never had an Asian pear, it's basically a fruit that is highly juicy with a bit of crunch ;)

Well, guess what I found at the Asian grocery store? You got it, Jicama! It's dirt cheap too! So I bought this 2 pound beast thinking, gee what do I do now? I was scared that it would hard to clean and that I wouldn't know how to cook it. Boy was I wrong!

Jicama is so easy to clean! Although it looks tough, it is very easy to cut. It's kind of like cutting a massive apple. That easy! Peeling it is very easy too, the skin just comes off. The other beautiful thing about it is that you can eat it raw and it's tasty!

There are a bunch of way to enjoy Jicama. You can grate it and add to a salad, you can bake it, or in my case make jicama "fries".

Literally, all I've done was cut the Jicama in fry shaped strips and season. For my seasoning I added a bit of extra virgin olive oil, salt, pepper, and paprika. Easy peasy!


Now the sneaky bonus :P These fries are great for those watching their weight because they are high in water and low in calories. This snack is too good to be true ;)

PS: Totally ate half of that Jicama in one day :P

Happy St.Patrick's Day :)

Hey everyone :) Hope you all enjoyed St. Patrick's Day, I for sure did :)

I can't believe it! There are only 2.5 weeks of school left and then exam time. So just need to hang in there because the last month of school is always the worst time for students (even worse then exam time). Unfortunately, I've been to busy (AKA not been home all day) to play around with new recipes and have been depleting my freezer storage :P Therefore, I've decided to share an old recipe that I constantly used over the summer whenever I went for hikes and my "exploration" trips :P

Oatmeal Cookie Timbits

Now that the swimming season is over I'm slowly switching over to running. Yesturday I went for a nice and easy 6km run and am hoping to slowly increase my distance. Once I get my endurance a bit up, I'll start adding in drills and speedwork. Since I'll be running a 10km race in the first week of May, it works out perfectly that I have 12 weeks to train. I just still need to formulate a proper training schedule :P

The one thing that I've forgotten about running is just how hungry it makes you :S So I set out to the kitchen to make yummy portable healthy chewy oatmeal Timbits as post-running snacks. I baked these before for a friend's B-day, but I've used more honey to make them more desert like. When baking I actually like to undercook the cookies as it keeps them moist and chewy.
