Never fear!
Yellow Split Peas are here!
The changes I've made included adding a bit more cheese that is more aged (meaning it has more flavour) and is grated, adding some caramelized onions along with rosemary. Additionally, I used small shell noodles as I thought their shape would be better for holding sauce. So here's the new recipe
Rosemary McDal Cheese
Ingredients (Serves 6-7)
- 1 cup of yellow split peas
- 3 cups of water
- 70g of grated aged cheddar cheese
- 3 tbsp water
- 1 onion
- oil
- freshly group pepper
- salt (to taste depending on cheese used)
- 2 tsp of rosemary
- 5L of water
- 1 tbsp salt
- 3 cups (4 servings) of small shell pasta
Directions
- Soak the split peas in water overnight
- Bring to boil and then simmer for about 40 minutes or until mushy
- Drain any excess water
- Mix in the grated cheese while the peas are still warm
- Dice up the onion and fry it until it starts to brown
- Place the split pea/ cheese mixture into the food processor and grind
- Add in about 3 tbsp of water while grinding to give it a sauce like consistency
- Add the onions, pepper, and rosemary
- Grind
- Adjust for salt
- Grind
- Meanwhile prepare your pasta
- Pour the sauce over the pasta
- Let the sauce cool down and solidify
My parents and grandparents approved of this recipe and my dad ended up eating good two servings. Great I didn't even get a chance to take a picture because they managed to eat everything -.- Well at least they like it :D
